I am nervous !
 This Saturday, I am going to try to become PIYO certified! My goal is to become a PIYO instructor! TEACH! Yes, ME! I am making my dreams come true! 

This is something I have wanted to do in fitness for years but never thought I could or would or even how. I wasn't a fitness person until my 40s. But I had a tickle inside once I had my son almost 5 yrs ago. I wanted to be fit and have a career in fitness. Where this came from I do not know... This was beforeI discovered Beachbody and I wasn't doing anything fitness related at all. Not even working out.

 The last couple years, discovering myself and how much health and fitness means to me has been one of the best things of my life. It's right up there with marrying Eric AND having Lincoln. HUGE! My goal is to pass this class with flying colors and be an PIYO instructor when Lincoln is in preschool. It's a HUGE goal! It's a scary goal as it really just depends on my physical ability not mental. If it were a mental strength test I wouldn't be nervous, I got that covered! :) I know I am stronger physically than ever before. But being a fit mom is kind of a newer part of my life, and I'm a bit nervous. 

That being said, I AM SO EXCITED for this next step in my life and going for it! Making my dreams come true, designing my life! This post is making sure I don't let the nerves get to me. I CAN DO THIS!

Quinoa Salad

Quinoa Quinoa every where! It's all the rage! And it should be in my opinion! It's not only fantastic but so very versatile! You can use it hot, cold, fresh or stored in the fridge for use the next day, seasoned or plain, as a side or main dish. 
  • Its chock full of protein, in fact it is one of the most protein rich foods we can eat!
  • It contains twice as much fiber as other grains.
  • It contains Iron to keep our red blood cells healthy.
  • It contains lysine to help our tissue grow and repair
  • It contains magnesium which promotes healthy blood sugar levels, detoxification, energy production and promotes healthy bones and teeth.
  • It is gluten free.

Its good stuff!
I mean, come on! For one simple grain this is amazing. Okay maybe I'm going over board but I LOVE this stuff. I could eat it daily truly. There is so much you can do with it.



One of my absolute favorite recipes using Quinoa is this wonderful salad. My husband and I can't get enough of it. 


LOVE LOVE LOVE!



Serves 1:
Cook Quinoa in organic chicken broth to enhance yumminess!

Ingredients;

  • 1/2 cup cooked Quinoa cooled
  • 1/4 cup raw spinach chopped
  • 1/2 of chicken breast Diced
  • 1/4 cup cherry tomatoes diced
  • 1/4 cucumber diced
  • 1 or 2 Tbs red onion
  • 5-6 diced Kalamata olives
  • 1.5 tbs of Newmans Own Light Italian Salad Dressing or Creamy Garlic Dressing
  • A squirt of fresh lemon juice
Directions; In a bowl, combine all ingredients.
Adding some Feta Cheese crumbles makes this EVEN BETTER!

Why Coaching?

I was asked today, why did you become a coach?
It's such an easy answer for me to explain really. Why would I pass up on an opportunity for happiness
  • I became a coach because I wanted to stay accountable to me Forever! 
  • I want to be happy and healthy inside and out and never go back to being uncomfortable in my own skin. 
  • I never want to go back to a stressful office job. That stress was no good for me or my family. It took a lot out of me that I am still replacing. 
  • I want to always be able to stay home for my son and give him the most loving, supporting, healthy life all kids should have. I don't want to miss a moment of him. 
  • I want to help take the burden off my husband for paying the bills to live the lifestyle we choose.
  • I want to help others be able to find this happiness as well. To do something they love, that helps them in more ways than just financially.
That's my story and I'm sticking to it!

Flaws




 This is a beautiful saying. And so true.
Do you know what your flaws are and accept them? 
I know exactly what my issues are. I still have a hard time changing certain actions and attitudes. But I'm working HARD internally on them. I have been for quite some time. It took many years to acknowledge my flaws but I know. Having a child certainly puts things into perspective. When you love something so much you would do anything for it, and you HAVE TO! You start working on yourself to change things for the better. To make life a better happier more positive place. It's just what happens. 

 Now, nobody and I mean nobody can use anything about me, against me. I can honestly say I feel good about my actions. This has taken a lot of work that many will never see or do themselves and that's ok. I feel at peace with my decisions. Truly. You always need to work on yourself and accept your flaws as nobody is perfect. But once you understand your flaws, you OWN them. Nobody can use it against you. Ever. Now it's their turn. Always feel at peace with your actions and if you don't, do something about it.
