Healthy Ice Cream

This past week my son was VERY sick. 1st year of preschool and we all have gotten everything and I mean everything that has gone around! This last week he got the coxsackievirus A16 virus. Poor thing it was horrible! He couldn't even swallow and he wouldn't eat as it was too painful. I had to make sure he was getting nutrients and it was something that made him feel better, so I made home made Ice Cream. :)

YEAY FOR ICE CREAM!

It was so good my entire family had it for snacks 3 days in a row. This is not the kind of Ice Cream that takes forever to make, nor is it packed full of sugar. It is the kind of Ice Cream that is full of GOODNESS, HEALTHY FOR YOU, GUILT FREE and you need to eat it ASAP upon making. This wont last in the freezer. It is basically 2-3 ingredients and take 5 minutes TOPS to make. I got 2 thumbs up from everyone!

    Ingredients:

    • Frozen Fruit
    • Milk of choice-Milk, Almond milk, Coconut milk
    THAT'S IT!

    Directions:

    • Add desired amount of frozen fruit into blender
    • Slowly add 1 oz at a time of milk
    • Blend until desired smooth consistency.

The more milk you add, the more it will turn into a fruit smoothy. So go slow and only add 1oz at a time.

I made this beautiful Tropical Mango Ice cream using 1 package or organic frozen Mango & 3 large frozen Pineapple rings with about 5 oz of Coconut Milk. This made 4 servings.

I also made a berry delight with frozen 1 package of Blueberries, Raspberries and Blackberries using regular 5 oz of 2% regular milk and a few frozen whole blueberries to top it off. Making 4 servings.

    Easy, Fast, Fun and Delicious!

Guilt Free Chocolate Peanut Butter Cups

What's the best flavor in the world?
Chocolate and Peanut Butter right? I know!

How amazing would it be to have a 100% guilt free treat!? Or even better, a chocolaty pre-workout snack! That's right I said it! A healthy Peanut Butter cup you can feel GOOD about eating. My ONLY problem with these is my son likes them a ton. He gets one for "desert" often so I have to make them all the time to have enough on hand for everyone. But since they take 10 minutes TOTAL to make....... WHO CARES!!!

    Makes 4 large  cups:

     1 packet of Chocolate Shakeology
2 Tbsp of Organic Virgin Coconut Oil
     4 tsp Organic Peanut Butter
     4 mini cup cake liners

    Directions:
    • Melt 2 Tbsp of Coconut Oil. In a small bowl mix Chocolate Shakeology packet  and oil until smooth.

    • In cupcake liners, Pour about 1 tsp of chocolate sauce.
    • Add 1 tsp of Peanut Butter on top of chocolate.

    • Pour remainder of chocolate over Peanut Butter covering each tsp.
    • Place in freezer for 5-10 minutes & enjoy!
You can put them in plastic bags once they set to have on hand for the following week.

    YUMMY!

    Designing my life

Today I wrote an intro on myself for a coaching group my team is holding. It was an awesome thing writing things down! It reminded me of how exciting my future is and got me all fired up! It reminded me of how fortunate my life is and how I am designing my life how I CHOOSE

My life is in my hands and I am choosing what today and my future hold.

You can't wait for things to come to you. You need to take the steps and make them happen for you.

Hi everyone. My name is Moksha (pronounced mohk-shuh ) I am a stay at home mom of a spirited 4.5 yr old boy. I used to work the hefty hours as an exec in audio Post production. Tons of hours, tons of stress and tons of everything. I gave that all up once my son arrived.

During my time at home I discovered Beachbody through Heather (who used to be my client in Post). I started out small with "10 Minute Trainer" and NOT committing to a group because it scared me. I needed to workout and start taking care of myself but didn't want the pressure I though an accountability group had. Accountability wasn't something that sounded fun. I completed "10 min trainer" on my own and moved onto Hip Hop ABs because it was on sale. Still not in a group, and still not listening to my friend advising me to be a discount coach to get the 25% off my purchases. I was loving my new found fitness routine and I quickly moved onto Focus T25. Still not a coach yet, and still paying full price for my new found love of Shakeology and fitness programs. However this time I did decide to join an accountability group. And guess what? I LOVED IT! I was more focused, I met some really amazing people and got great results. So, finally decided to become a coach not only for the discount, but also to keep myself accountable for the long haul, to make extra income for Preschool and to help my friends do the same. I finally understood how amazing this opportunity was for me. Signing up as a coach changed my life. I found a new calling and purpose. I am now starting to study to become a Personal Trainer AND will be Piyo Certified next year so I can teach classes while my son is in school! This is something I always DREAMED of doing but never thought I could.

I never thought I would find another career I loved as much as Post, but getting fit and healthy while helping motivate others to do the same is even better! Being a stay at home is my WHY. And now I am a more confident, healthier mom who has a new jump in her step. Life doesn't get any better than doing something you love and being able to make a living of it!

    Yes, I'm passionate about this!

If my post inspired you at all I would LOVE to hear from you!

Tomato, Basil and Garlic Angel Hair Pasta

I truly believe you shouldn't eliminate ANY food you LOVE completely unless you have to. What kind of world would that be? And you will probably blow it big time by doing so. Everything in moderation is the key to a healthy happy life in my opinion.

Pasta is one of those dishes! Twice a month is a great goal for my family. A nice yummy comforting side dish. Nothing beats fresh REAL pasta but there are some great gluten free brands out there. One of my favorite brands is Tinkyada Gluten Free Brown Rice Pasta.

On those busy nights at home, when you need to make a quick meal, THIS is the go to pasta recipe. So quick and easy! So fresh and delicious! Kid friendly if you omit the garlic. My son LOVES this!
    YUMMY YUMMY IN MY TUMMY!

    Ingredients:
Makes 2 servings. I wing this recipe each time with the amounts, so play with it and make it taste to your liking! Adding more or less, of the ingredients.

    • 1/4 box of Angel Hair pasta
    • Half a box of Cherry Tomatoes-Halved
    • 1 Garlic clove- Chopped
    • 2 Tbs Extra Virgen Olive Oil
    • 2 Tbs Grass Fed-Butter
    • 5 leaves of Fresh Basil - chopped
    • Garlic Salt to taste
    Directions:

    • Cook Pasta per directions.
    • Add Olive Oil,1 tbs of Grass-Fed Butter, Tomatoes and 3/4 of the Fresh chopped Basil to sauté pan. Saute on medium/low for about 4 minutes. If it seems like you are frying the Tomatoes and Basil add a dash more oil and butter. You are sautéing not frying them.
    • Add chopped garlic and cook for 1 more minute. Or until tomatoes are tender and sweet. *Do not over cook the garlic. Burning the garlic will ruin the flavor.
    • Add the remaining Tbs of Grass-Fed Butter to drained, warm pasta with the warm Tomato, Basil and oil mixture. Add salt to taste. Serve immediately.

Light, Fresh, Delish and full of Healthy Fats!

*Make sure you use Organic ingredients and Grass-Fed Butter for health benefits. All butter is not created equal. :) KerryGold is a great butter. You can find it at Trader Joes or Whole Foods.

Chocolate, Peanut Butter and Coconut Shake

This shake just made my whole day better. Total comfort food! And it really is.
You feel like you are splurging.

Today has been a ROLLER COASTER of a day. Some people just exude negativity and I put my foot down today. I didn't loose it thankfully, I listened, but I also told them flat out how they made me feel and how I saw their actions. I didn't cherry coat anything this time. I needed to come home and workout hard after that frustration. Feeling so frustrated and agitated made my mind just crave junk food! Why does that happen? Knowing that would make me feel even worse, I made this heavenly thing instead.

This tastes more like a treat and instantly made me happy. How is it that Peanut Butter and chocolate just makes you instantly happy? Whoever thinks Shakeology is a diet food, or not satisfying needs to email me. We need to chat. Hunger pains... GONE! Junk Craving.... GONE! Mood... BETTER!

Todays recipes is my Favorite. My, "If I could only make 1 shake ever again this is the flavor I would choose" type of favorite.

Get the picture? A must have!

    • 1 Chocolate Shakeology packet
    • 1 HEAPING Tbs of Peanut Butter
    • 8 oz of Almond Milk or Coconut Milk
    • 1 Tbs of unsweetened coconut flakes.
    Pure Delicious Heavenly Food!

    Banana Bugs

I am SOO very lucky to have a child who will basically try ANY food you give to him. He has always had the best of appetites. I have never had to make a separate meal for him other than what I make for my husband and I. If we have a big ol Spinach salad for dinner, he does too. And he LOVES IT! In fact, he requests salads when we go out to restaurants. He has expensive taste buds that's for sure.  For example, he wont eat regular string cheese or cheddar, he only wants Aged Gouda and Manchego cheese. He wont eat hot dogs or grilled cheese, he would rather have roasted broccoli and green beans. He does love Hamburgers and Pizza, however  Who doesn't right? He's so my son!

Basically, I don't have to make his food funny for him to eat it, I just like to. He enjoys it and I have even more fun creating it. The more fun in our lives the better! So today I made Banana bugs. Who doesn't like Bananas or Peanut Butter? Who doesn't like Coconut or Pretzels? Raisins I can see, so use mini chocolate chips and make them a treat. Be creative and have some fun. Food is awesome!

    1 Banana
    1 TBS Peanut Butter
    1 Tsp unsweetened Coconut flakes
    8 Pretzel sticks
    4 Raisins

    3 Day Refresh Review

I was so happy when I discovered they came out with a 3 day cleanse. The 21 Day Reset is amazing but you don't always want to take 21 days to do a cleanse. And its hard for me NOT to workout for 21 whole days. Feels weird to me.

This short cleanse was a pleasant surprise. I not only got to have my shakes which I love, but REAL FOOD TOO! Imagine that! In all honestly you don't go hungry if you stay on an eating schedule and choose from the foods you like best.  And you still get to workout and have plenty of energy to do so.

After the 3 days I lost my bloat AND 4 lbs. For me THIS WAS GREAT! That was my goal. I am planning on doing this 3 day cleanse once a month now. Just a little refresh. :) In the meantime, I'm continuing with my Shakeology and PIYO to get some inches down and gain some lean muscle. HAPPY PANTS!

Message me if you want info on this sweet 3 Day Refresh. You can join me and jump start some weight loss, de-bloat and feel great!

    Guacamole

    Hello addiction!
This is BY FAR, the best Guacamole you will have on this side of the border!
    SO DELISH!
It's worth the minimal work. Better than ANY store bought guac you can find. And there are some great ones out there. But this.... This is something special!
    Fresh, Spicy, Tart, Salty. YUMMY!
Buy Organic Ingredients when possible. It's worth your health! No more excuses. And here it is!

    Ingredients:
    •  3 small ripe avocados diced
    •   juice of 1.5 limes
    •  1 cup of cherry tomatoes diced in half and squeezed of excess liquid
    •   ¼ cup red onion diced
    •   handful of cilantro diced
    •   pink Himalayan salt to taste
    •   Garlic Salt to taste
    •   Pepper to taste
    •   1 garlic clove minced
    •   1 jalapeño or serrano pepper diced with seeds removed

I like to use my food processor and chop the tomatoes, jalapeño, cilantro, garlic and red onion. Be careful not to OVER chop it. You're not looking for mush. Keep it chunky. Once diced and mixed, add the avocado to food processor or add avocado and chopped ingredients from food processor into a bowl and mash with a fork, adding lime juice, salt and pepper to taste.

    THE BEST GUAC EVER!
    AM I RIGHT?

Cucumber salad is one of my favorite dishes.... IN THE WORLD. For real. I could eat this daily. I do eat it at least once a week or more throughout the year. I have many different versions but this one is so nice and clean, refreshing. Pair it with a nice white wine.... Oh wait I'm not a sommelier and this blog isn't about wine... although I do love my wine too.  Hmmmmmmmm  Anyway, you wont go wrong with this yummy salad.

    Overnight Refrigerator Chia Oatmeal

This really can't get much better or easier! No cooking at all, just dump it in, shake and stick it the fridge overnight!
I have been playing with this recipe for a while tweaking it to my liking. It's so easy and good. You can really get creative with this. Healthy breakfast to go.  Protein, Fiber and tons of vitamins and nutrients! WINNING!

    • 1/4 cup uncooked old fashioned rolled oats
    • 1/3 cup coconut milk
    • 1/4 cup low-fat Greek yogurt
    • 1-1/2 teaspoons dried chia seeds
    • 1 tablespoon Honey
    • 1/4 to 1/3 cup chopped fruit or enough to fill jar
    Optional
    • 1/4 teaspoon vanilla extract if you are using regular milk or almond milk
    • Instead of honey you can use stevia or  maple syrup. Honey is just my go to sweetener.
    • You can use regular whole or skim milk and even almond milk. Coconut milk brings that extra flavor I love.
    • I don't always add the Greek yogurt. If I don't, I use 3/4 cup of full fat coconut milk instead. MMMMM
    • All organic ingredients when possible please.
In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, honey and fruit. Put lid on jar and shake until well combined. Refrigerate overnight or as long as 2-3 days. Eat chilled. YUMMY!!

Add whatever fruit you desire. Add coco powder for a chocolate version. Theyummlife.com has some great recipes if you don't feel creative. This is where I discovered this amazing breakfast recipe.
