Hummus, Avocado & Tomato Toast

Sourdough Toast! What could make Sourdough Toast EVEN BETTER? Adding Humus, Avocado and Tomatoes to it. So delicious and such a great breakfast or snack. All the right healthy fats and carbs to get you going.

Hummus, Avocado & Tomato Toast

INGREDIENTS:

  • 1 piece of sourdough bread toasted
  • 1 tbs hummus
  • Drizzle of lemon over hummus
  • 1/4 of an avocado
  • 3 cherry tomatoes
Avocado has Healthy fats, Protein, Vitamins and minerals, and Dietary fiber 
Hummus also has Healthy fats, Protein, and Vitamins and minerals
Sourdough Bread has has a lower glycemic index and the protein gluten has been broken down into amino acids so it's a little less harsh on your belly than wheat or white bread, meaning it's easier to digest. (Plus it tastes better. :) 
Tomatoes have Vitamins galore, Potassium, Fiber and Antioxidants.
It's a winning combo in my book.

Summer Corn Salad

Summertime is salad experimenting time for me. Why stick with the usual leafy salads? Which I love by the way! But sometimes you need to whoop it up. Corn is versatile, sweet and delicious. Is there really anyone who doesn't LOVE it? It's gotten such a bad rap over the years with being GMO. Just buy NON GMO organic and enjoy it! 

When I saw a recipe for a corn salad I thought to myself, THIS IS IT! I had to revise the recipe make to my own and add some zing and tastiness! I always need the tasty! 
The final recipe is light, refreshing and delicious. 


This is SOOO YUMMY!  I LOVE CORN!!! 
Makes 5-6 servings
Ingredients;
  • 4 ears corn, husked and cleaned
  • 1 pint grape tomatoes, halved
  • 2 tbs fresh basil, chopped
  • 4 tsp olive oil
  • 3 tsp red wine vinegar
  • 4 oz crumbled feta cheese
  • 1/2 tsp ground black pepper
  • 1/2 tsp pink himalayan salt
Taste the dressing as you make it. If you like MORE zing, add more vinegar, less zing add less. Make it how YOU like it. That is key. 

Directions;

  • Place your grill on high. Grilling adds flavor. Or heat your oven to 350 degrees.
  • Wrap each cleaned ear of corn in aluminum foil. The entire cob needs be covered with just one layer so it will steam the kernels.
  • Grill or cook all wrapped ears for about five minutes per side, turning occasionally.
  • Remove the corn from the grill or oven and let it cool.
  • Stand the corn upright in a large bowl, and holding the top of the corn, use a sharp knife to cut off the kernels from top to bottom. Discard cobs. You will have about 2 1/2 cups corn kernels for the salad.
  • Add the tomatoes, basil, olive oil, red wine vinegar, feta, pink salt, and pepper to the bowl of corn. Lightly toss.
  • Serve slightly chilled.


The perfect side with grilled steak, chicken or fish.

Quinoa Salad

Quinoa Quinoa every where! It's all the rage! And it should be in my opinion! It's not only fantastic but so very versatile! You can use it hot, cold, fresh or stored in the fridge for use the next day, seasoned or plain, as a side or main dish. 
  • Its chock full of protein, in fact it is one of the most protein rich foods we can eat!
  • It contains twice as much fiber as other grains.
  • It contains Iron to keep our red blood cells healthy.
  • It contains lysine to help our tissue grow and repair
  • It contains magnesium which promotes healthy blood sugar levels, detoxification, energy production and promotes healthy bones and teeth.
  • It is gluten free.

Its good stuff!
I mean, come on! For one simple grain this is amazing. Okay maybe I'm going over board but I LOVE this stuff. I could eat it daily truly. There is so much you can do with it.



One of my absolute favorite recipes using Quinoa is this wonderful salad. My husband and I can't get enough of it.

Serves 1:
Cook Quinoa in organic chicken broth to enhance yumminess!

Ingredients;

  • 1/2 cup cooked Quinoa cooled
  • 1/4 cup raw spinach chopped
  • 1/2 of chicken breast Diced
  • 1/4 cup cherry tomatoes diced
  • 1/4 cucumber diced
  • 1 or 2 Tbs red onion
  • 5-6 diced Kalamata olives
  • 1.5 tbs of Newmans Own Light Italian Salad Dressing or Creamy Garlic Dressing
  • A squirt of fresh lemon juice
Directions; In a bowl, combine all ingredients.
Adding some Feta Cheese crumbles makes this EVEN BETTER!

Guacamole

Hello addiction! 
This is BY FAR, the best Guacamole you will have on this side of the border! 
SO DELISH! 
It's worth the minimal work. Better than ANY store bought guac you can find. And there are some great ones out there. But this.... This is something special! 
Fresh, Spicy, Tart, Salty. YUMMY! 
Buy Organic Ingredients when possible. It's worth your health! No more excuses. And here it is!



Ingredients:
  •  3 small ripe avocados diced 
  •   juice of 1.5 limes
  •  1 cup of cherry tomatoes diced in half and squeezed of excess liquid 
  •   ¼ cup red onion diced 
  •   handful of cilantro diced 
  •   pink Himalayan salt to taste
  •   Garlic Salt to taste
  •   Pepper to taste 
  •   1 garlic clove minced 
  •   1 jalapeño or serrano pepper diced with seeds removed 




I like to use my food processor and chop the tomatoes, jalapeño, cilantro, garlic and red onion. Be careful not to OVER chop it. You're not looking for mush. Keep it chunky. Once diced and mixed, add the avocado to food processor or add avocado and chopped ingredients from food processor into a bowl and mash with a fork, adding lime juice, salt and pepper to taste.

Cucumber and Tomato Salad

Cucumber salad is one of my favorite dishes.... IN THE WORLD. For real. I could eat this daily. I do eat it at least once a week or more throughout the year. I have many different versions but this one is so nice and clean, refreshing. Pair it with a nice white wine.... Oh wait I'm not a sommelier and this blog isn't about wine... although I do love my wine too.  Hmmmmmmmm  Anyway, you wont go wrong with this yummy salad. 


Ingredients: Makes 2 servings

2 Tbsp Braggs Apple Cider Vinegar
2 tsp Balsamic Vinegar
4 tsp Fresh Lemon Juice
2 tsp Extra-Virgin Olive Oil
1 Large Cucumber, halved and sliced with  skin on preferably.
1 Cup Cherry Tomatoes, halved
1 Tbsp Chopped Red Onion (optional)
2 Tbsp Chopped Fresh Basil leaves
Dash of Pink Himalayan Salt per  taste (optional)
Dash of Lemon Pepper to taste (optional)
(Add some feta cheese for extra Yumminess!)



1. Combine apple cider vinegar and balsamic vinegars, lemon  juice and oil in small bowl; mix well and set aside.
2. Once you cut the cucumber, lay pieces on cutting board with a sprinkle of salt for 5 minutes. Then pat with a dry paper towel to soak the water that has been released. Then, Combine Cucumber, Red Onion, Tomatoes, Basil and seasoning in a larger bowl. Mix well.
3. Drizzle dressing over mixture; toss gently.
